Guinea Fowl with Pearl Onions and Mushrooms today a new recipe designed for the meals of the upcoming holidays with a special kind of white meat, the guinea hen!

Before being cooked, guinea fowl requires about two days of aging in a cool place to obtain flavorful and tender meat.

If young meat is excellent roasted, otherwise it is exquisite stewed as I did today!

After theaging I prepared this flavorful recipe accompanying this dish with some instant polenta, purposely left very soft…

WHAT ARE THE MOST COMMONLY USED MUSHROOMS IN CUISINE???
1) CHAMPIGNON: available year-round and extremely versatile;
2) PORCINI: great raw, sautéed, or dried;
3) CHANTERELLES: looks like a small trumpet and shines in simple recipes;
4) MORELS: found dried and fresh, they are poisonous unless cooked, giving a delicate almost sweet aroma;
5) PIOPPINI: perfect for long-cooking recipes like stews and roasts;
6) SHIITAKE: the excellence of oriental dishes, also used in great soups.

Ingredients RECIPE GUINEA FOWL WITH PEARL ONIONS AND MUSHROOMS

  • lbs guinea fowl in pieces
  • 7 oz pearl onions
  • 3 oz Butter
  • 0.7 oz Flour
  • 1.4 oz dried mushrooms
  • 1 glass red wine
  • 2 tbsp tomato paste
  • to taste salt and pepper

Preparation RECIPE GUINEA FOWL WITH PEARL ONIONS AND MUSHROOMS

  • Soak the dried mushrooms in lukewarm water, pass the guinea fowl pieces over the flame to remove any remaining small feathers and cut the pearl onions in half.
    In a large casserole, melt the butter over low heat.
    Add the pearl onions and sauté for about 5 minutes, adding a little water if necessary.

  • Add the guinea fowl pieces dusted with flour to the casserole.
    Brown the meat well by turning it until golden on all sides.
    Pour in the red wine and let the alcohol evaporate completely.

  • Now add the soaked and squeezed dried mushrooms and the tomato paste.

  • Season with salt and pepper and continue cooking for about 60 minutes or until fully cooked.

  • Once cooked, divide the guinea fowl onto plates according to the number of guests, drizzling each plate with the appetizing sauce formed during cooking.

  • Serve this main dish of guinea fowl with pearl onions and mushrooms with soft polenta or a mashed potatoes.. Enjoy your meal!!!
