Half Sleeves with Brussels Sprouts and Beans

An easy first course, half sleeves with Brussels sprouts and cannellini beans, taken from Cucina naturale magazine of February 2025, very simple and very quick. In my opinion, it needs a pinch of chili pepper, which is not included in the original recipe!

I used regular durum wheat pasta, but if you prefer, you can use buckwheat and/or whole wheat pasta, as you like!

Using a bean cream thickens the dish, making it healthy with vegetable proteins, so with fewer calories and fat compared to adding cheese or cream.

INGREDIENTS

  • 11 oz half sleeves (or other short pasta)
  • 10 oz canned cannellini beans
  • 10 oz Brussels sprouts
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste chili pepper (flakes … I think it's great !!!!!)

FOR THE PREPARATION OF THE RECIPE HALF SLEEVES WITH BRUSSELS SPROUTS AND BEANS

  • First, I need to clean and wash the Brussels sprouts and then boil them in a saucepan with salted water.

    I drain the vegetables, placing them in a bowl, and in the same water, I cook the pasta, today the half sleeves, but we could also use other short pasta.

  • In a pan, I put a couple of tablespoons of extra virgin olive oil, then add the Brussels sprouts whole or halved and some of the cannellini beans .

    I let it flavor for 4/5 minutes, adding salt and pepper.

  • I blend the rest of the beans in the mixer and add them to the pan with the Brussels sprouts, also adding a ladle of pasta cooking water, obtaining a cream.

  • I drain the pasta and pour it directly into the pan with the bean sauce, bean cream, and Brussels sprouts.

    I taste and adjust the seasoning by adding some fresh chopped parsley and immediately bringing it to the table.

    Enjoy your meal with half sleeves topped with bean cream cannellini and Brussels sprouts!
