Tomatoes are the stars of summer, and each year I look for new ideas to enhance them in the kitchen. Today I propose these honey and thyme tomatoes cooked in an air fryer, a fragrant, simple, and truly surprising side dish.
The combination of the sweetness of honey and the fresh aroma of thyme transforms the tomatoes into a delicate and flavorful dish, perfect to serve with fresh cheeses like burrata or juicy buffalo mozzarella, crostini, or alongside light main courses.
For this recipe, you can use:
– classic round tomatoes,
– ribbed tomatoes for a more rustic version,
– or the ones I used, beefsteak tomatoes, which are meatier and juicier.
By cooking them in an air fryer, you save time, avoid turning on the oven, and still achieve perfect caramelization in less than 15 minutes.
A versatile, fragrant, summer recipe. Try it now!
How to serve them
On crostoni with ricotta or stracchino
As an appetizer with burrata
As a side dish to white meat or grilled tofu

Still on the theme of RECIPES with tomatoes, I leave you other proposals just below:
- Difficulty: Very Easy
- Cost: Very Affordable

- Portions: 2 People
- Cooking methods: Air Frying
- Cuisine: Italian
- Seasonality: All Seasons
Ingredients

Tools
- Air Fryers
Few Steps for Juicy Tomatoes!
I cut the tomatoes in half and place them on a plate with the cut side up.
In a small bowl, I mix:
– honey
– vinegar
– 2 tablespoons of oil
– a pinch of salt and pepper.I pour the sauce over each tomato and add a few fresh thyme leaves.
I gently transfer the seasoned tomato halves into the air fryer basket (I decided to put perforated parchment paper on the bottom).
I cook at 392°F (200°C) for 12-15 minutes, always checking the degree of cooking: they should become soft and slightly caramelized.
Here they are ready, the tomatoes with thyme and honey to accompany cheeses, a quick slice of meat, or to stuff a nice slice of toasted bread!
Bon appétit and happy cooking!
Annalisa
Storage
They keep in the fridge for 2 days. Excellent even cold!
