HONEY ROAST PORK LOIN RECIPE

After an exciting start with warm, sometimes almost summer temperatures, in Bologna as in other parts of Italy, the cold has returned and instead of thinking about carpaccios and Caprese salads, I thought it would be fitting today to make a honey roast pork loin!

The pork loin is a cut from the back to the loin of the pig and is often used to make succulent roasts. Nothing is wasted from pork, and there are many pork cuts used in many kitchens and regional preparations, and this dish has a very inviting taste, excellent with potatoes, a classic for a family meal!

Ingredients for HONEY ROAST PORK LOIN RECIPE

  • 2.2 lbs Pork loin
  • 2.1 oz Acacia honey
  • 8 slices streaky bacon
  • as needed cloves
  • as needed garlic cloves
  • as needed rosemary
  • as needed salt and pepper
  • as needed vegetable broth
  • as needed dry white wine

Preparation of HONEY ROAST PORK LOIN RECIPE

  • First, we need to lard the pork by making some incisions on the surface of the loin and inserting garlic cloves, rosemary needles, and cloves as desired.

  • Once this operation is completed, we wrap the meat (barding) with the streaky bacon, tying it all so that it remains firmly together during cooking.

  • We also prepare the broth and keep it aside: about 2/3 cups will be needed. Brown the pork loin in a pan without added fats and turn it on all sides.

  • Pour the wine and let it all evaporate. Adjust with salt and pepper.

  • Transfer the meat into a baking tray and cook it, basting gradually with a liquid made of acacia honey mixed with a couple of cups of broth.

  • Cook at low flame at about 375°F for about 40 minutes. Once cooked, serve the honey roast pork loin with roast potatoes or mashed potatoes or… give room to your imagination and taste! Enjoy your meal !!!
