This ice cream log with chocolate sheets, similar to VIENNETTA Algida, is prepared with a soft cream and thin milk chocolate layers that I melted and then spread on a parchment paper and let cool to “solidify” and then create layers in the spoon dessert.
It is a very simple recipe to make in advance as it needs to rest in the freezer so that we always have it available for a sweet craving or to serve if we have unexpected guests.

- 10.5 oz sweetened condensed milk

FOR THE PREPARATION OF ICE CREAM LOG with chocolate sheets
FOR THE CHOCOLATE SHEETS For this delicious ice cream dessert, first, melt the chocolate in a bain-marie or microwave to get a smooth, spreadable mixture.
I place the bottom of my loaf pan on a parchment paper and mark the perimeter with a pencil, which will serve me to make the chocolate strips that will be the solid layers of the dessert.
Pour the melted chocolate into the rectangle of parchment paper, leveling it as best as possible, and continue making 4/5 chocolate sheets that go into the freezer to solidify.
FOR THE CREAM While the chocolate sheets are hardening, I start to whip the fresh cream by adding the condensed milk in a thin stream, and once well set, I save 2/3 tablespoons for the final decoration.
When the chocolate sheets have solidified, I begin to assemble the homemade Viennetta-like dessert.
LINE THE PAN WITH PLASTIC WRAP and place a chocolate sheet at the bottom, then add a part of the cream, and continue layering until all ingredients are used.
Place THE VIENNETTA-TYPE ICE CREAM LOG IN THE FREEZER for 5/6 hours.
When it’s time to enjoy the ice cream dessert with cream and chocolate, take it out of the freezer, unmold it, and decorate with whipped cream tufts, some meringues, and a sprinkle of cocoa powder, either bitter or sweetened to personal liking.
