I saw a photo in Cucina Moderna and tried to create my own version of these amazing and delicious ice cream sponge cake squares!

This ice cream with sponge cake is filled with… milk gelato, pistachio grains, and fresh raspberries, and as you can imagine, you can vary it to your liking…

Use some chocolate gelato and add strawberry pieces or chocolate chips and almond or hazelnut grains…

So vary the type of gelato with fruit like strawberries and lemon, and whatever else you like for a delicious sponge cake ice cream perfect for this summer!

Ice Cream Sponge Cake

Ice Cream Sponge Cake

Ingredients

  • sponge cake about 1.5 inches high (ready-made 6 x 6 inches my recipe↑)
  • 2 cups milk gelato (or yogurt if you want to keep the rest of the ingredients)
  • 3.5 oz raspberries
  • 4 tbsps pistachio grains (more for decoration)
  • to taste powdered sugar (before serving)

Preparation

  • • If you prefer to make the sponge cake by hand, I leave the recipe in this article

    • Otherwise, let’s take the milk gelato out of the freezer and leave it at room temperature for a few minutes so that it can be combined with the other ingredients.

  • • While the gelato softens a little, we carefully wash the raspberries and gently dry them with kitchen paper.

  • • Cut the sponge cake into 1.5 inch squares (or if you prefer, rectangular pieces) and set aside.

  • • In a bowl, combine the gelato with chopped raspberries and pistachio grains.

    Mix a little and proceed to fill the ice cream sponge cake squares.

  • • Add some pistachio grains to the sides of the sponge cake squares with gelato inside and then put them in the freezer for at least 30/40 minutes before enjoying.

  • • After the time has passed and before serving, sprinkle the ice cream sponge cake squares with powdered sugar and serve at the table!

  • • Delicious with endless possible variations and combinations of fresh fruit and ice cream varieties…

    I highly recommend them!!!
