Invisible Apple Cake without Butter

Invisible Apple Cake without Butter, a dessert almost entirely based on fruit, light, creamy where the very little batter present is almost completely absorbed by the fruit until it becomes invisible!

It’s a dessert that can be recreated in new versions with other types of fruit, and I assure you it’s very, very good and very easy to make.
I used the mandolin to make very thin apple slices that I quickly added to the batter type  just made…
If you want to prevent the apple (I used Golden apples) from turning brown, add a little squeezed lemon juice but follow my lead for this delicate invisible apple cake without butter!
The invisible cake can also be made with other types of fruit like pears and strawberries…
The invisible apple cake is a very simple and genuine dessert suitable for breakfast as well as a snack, and so full of fruit it is also suitable for the little ones at home who will surely enjoy it…

Ingredients RECIPE INVISIBLE APPLE CAKE WITHOUT BUTTER

  • 5 apples (mine weighed 780 grams)
  • 2 medium eggs
  • 4.7 oz Milk
  • 0.52 cups All-purpose Flour
  • 1 packet baking powder
  • 0.25 cup brown sugar (or granulated)
  • 1 vanilla bean

Preparation RECIPE INVISIBLE APPLE CAKE WITHOUT BUTTER

  • In a bowl, beat the eggs with the sugar and the vanilla bean seeds. Then add the milk alternating with the sifted flour and baking powder.

    Invisible Apple Cake without Butter
  • Mix well to obtain a smooth batter without lumps.

  • Now add the finely sliced and cored apples, preferably using a mandolin.

  • Carefully mix so that the apple slices are coated with the little batter present.

  • Butter and flour or line the pan (for me, round 7 inches) with wet and squeezed parchment paper.

  • Pour the batter with apple slices and level it well on the surface.

  • Bake the invisible apple cake without butter at 350°F for 35/40 minutes or depending on the characteristics of your oven and until the surface is golden brown.

  • Let it cool, then remove from the mold and serve the delicious invisible apple cake without butter at the table!

Advice and notes

The variety of apple I used as mentioned above is the Golden Delicious, but if you prefer, you can use Pink Lady and/or Renette or any variety that holds up well during baking. For me, it’s perfect as is, but if you want to make it even more delicious, serve it accompanied by a vanilla-flavored custard.
