An Italian Chantilly or Diplomatic Cream is a soft cream with a delicate taste, it is perfect for accompanying cakes, pies, various leavened goods, and cookies in general.

Chantilly is certainly a sweet sauce that pairs beautifully with a classic pastry like Sponge Cake and was invented by the French Vatel in 1671.

The Italian Chantilly consists of the union of whipped cream with custard, and the different proportion of the two creams determines the different consistency.

Generally, the proportion is 1/3 or 2/3, so for a firmer cream, you can use more custard, or if you want it light and very soft, add more whipped cream in proportion.

Mine is a middle ground because it is light and fluffy, but it remains quite firm even if piped with a pastry bag and a star nozzle….

How to use Italian Chantilly or Diplomatic Cream?
This soft sweet cream is perfect for:
– filling shortcrust pastry shells;
– filling cakes from the classic Margherita cake to Sponge Cake;
– accompanying buttery cookies;
– filling cream puffs;
– garnishing muffins;
– filling cream tart;

How long does Italian Chantilly or Diplomatic Cream keep?
This delicate and soft cream, if well stored in the fridge with cling film, can be consumed within 2 days.

Ingredients RECIPE ITALIAN CHANTILLY

  • 1 oz Powdered Sugar
  • 1 cup Fresh Liquid Cream
  • to taste Vanilla Extract
  • 17.5 oz Custard

FOR PREPARING THE RECIPE ITALIAN CHANTILLY or DIPLOMATIC CREAM

  • To prepare a delicious Italian Chantilly, whip the fresh cream which must be very cold along with the electric whisk tools and also the bowl: all this will facilitate the process and the cream will whip better and faster!

  • Sift the powdered sugar and add it to the cream.

    Also add the vanilla extract.

    Mix the custard with the sweetened whipped cream using a hand whisk to better blend the two consistencies.

  • Put the Italian Chantilly or Diplomatic Cream in small cups if you need to serve it with cookies or put a few spoons on a serving plate if you need to serve it with cakes, pies, panettone, and pandoro… Enjoy with the Italian Chantilly!
