Today I cooked the Jerusalem artichoke puff pastry pie, a quick and easy savory pie that is very appetizing!
The Jerusalem artichoke is also known as sunchoke or earth apple and is considered a dietary tuber suitable for those with diabetes.
The Jerusalem artichoke contains no cholesterol and with 2.7 grams of fiber contributes to good intestinal function. It is also low in calories, having 73 calories per 100 grams of product.
Among other properties, the Jerusalem artichoke is detoxifying, gluten-free, boosts the immune system, speeds up metabolism, and combats fatigue.
The Jerusalem artichoke can also be eaten raw, slightly resembling artichokes in flavor (to me, it tastes like… nothing). The skin is edible, so keeping or removing it will depend on the type of preparation you intend to cook.
Jerusalem Artichokes contain a substance called inulin that maintains constant blood glucose levels, making them suitable for diabetics and those on a weight-loss diet.
If you decide to keep the skin, wash the tuber under running water and remove any soil and root residues with a small brush.

Ingredients for JERUSALEM ARTICHOKE PUFF PASTRY PIE
- 1 sheet ready-made puff pastry
- 350 g Jerusalem artichoke
- 1 mozzarella
- 1 egg yolk (optional and only before baking)
- leaves sage
- to taste salt and pepper

Preparation for JERUSALEM ARTICHOKE PUFF PASTRY PIE
Unroll the puff pastry and, keeping the parchment paper, place it in the mold: mine is 9 inches in diameter.
Clean, or rather peel, the Jerusalem artichoke thoroughly and, with GREAT patience, slice it thinly using a mandoline or a sharp knife.
Finely chop the mozzarella and drain it using a strainer.
Take the mold with the puff pastry and arrange the Jerusalem artichoke slices, trying to create an even layer across the surface.
Now sprinkle the diced mozzarella over the Jerusalem artichoke tart and season with salt and pepper.
With the remaining puff pastry, create a lattice as for pies and lightly brush the pastry with the beaten egg yolk.
Bake in a preheated oven at 375°F/390°F until golden and cooked through.
It will take about 25/30 minutes, but as always, it depends on your oven!
Once cooked, add some sage leaves and serve immediately to enjoy this surprising Jerusalem artichoke puff pastry pie!!!
THIS SAVORY PIE IS AMONG THE BEST I’VE EVER MADE, WITH A LIGHT FLAVOR AND A DELIGHTFUL TEXTURE BECAUSE THE JERUSALEM ARTICHOKE SLICES, WHILE COOKED, MAINTAIN THEIR THICKNESS, YOU CAN FEEL AND SEE THE SLICE, AND EVERY BITE IS REALLY DELICIOUS…HIGHLY RECOMMENDED!!!!!
