I have worked in Greek kitchens and love almost all the typical dishes, and on the blog, you will find a collection of recipes (read HERE) ranging from appetizers to desserts.
A typical preparation for Greek cuisine appetizers is sauces from TZATZIKI to MELITZANOSALATA and today I prepared the KTIPITI Greek dip based on roasted peppers and feta, truly exquisite and delicious with PITA or with croutons.
The appetizers on the blog are, I believe, the course with the most published recipes along with desserts, and I also suggest:

Ingredients
- 5.3 oz peppers (roasted and peeled)
- 7 oz feta
- 2 tbsps Greek yogurt 2% fat
- 1/2 clove garlic
- 1 pinch oregano
- 1 pinch sweet paprika
- to taste extra virgin olive oil
- to taste pepper
- to taste mint (freshly chopped)

Steps
1) As stated above, the pepper needs to be grilled or otherwise cooked and peeled, so… first, I wash and remove seeds and inner strands from the vegetable.
2) I bake or grill until the thin skin turns black, then place the peppers in a plastic bag, letting them cool for a few minutes.
3) This way, it will be very easy to remove the blackened skin and obtain soft and well-cooked pepper slices that I put in the bowl or immersion blender container.
4) Now I add the other ingredients: feta in chunks and yogurt.
5) I turn on the blender and also pour in the extra virgin olive oil, creating a smooth and creamy sauce.
6) Then I add the aromatic herbs, garlic, and adjust salt and pepper… In fact, for salt, it’s better to taste first because feta is quite flavorful and salty, so proceed carefully to avoid having the KTIPITI Greek dip inedible!
7) Here’s the finished Greek pepper and feta dip, now I put it in a sealed container and leave it in the fridge until it’s time to set up the savory appetizer buffet.

While researching online, I also found some recipes for the KTIPITI Greek dip that do not include yogurt… I find it makes everything more delicate and creamy, but as always, try it and maybe add yogurt only after blending feta and peppers to evaluate the taste!
