Browsing various French-language sites, I found the recipe for labneh yogurt cheese, also called labneh or laban, prepared with YOGURT made from cow’s milk.
After a little research, I read that it is also prepared with soy yogurt and is a typical Middle Eastern food, especially in Palestine and Lebanon, where it is one of the most common creamy APPETIZERS in the country.
I also read that LABNEH YOGURT CHEESE is also prepared in a sweet version by adding honey to the labneh cheese once made.
Personally, I was eager to taste it savory and I prepared some
spices (paprika, turmeric, and freshly ground black pepper) to enjoy it with bread.
The ideal would be PITA BREAD, but I was satisfied with the bread from my dear baker Lollo and wasn’t disappointed.

HOW TO SERVE LABNEH (yogurt cheese): Creative ideas and pairings
• As an appetizer; serve in a bowl dressed with extra virgin olive oil, a pinch of za’atar, oregano or paprika with flatbread, pita, or croutons
• As a dip or spread: delicious on toasted bread, crackers, or as a thin layer base for canapés
• In a sweet version: with an addition of honey, nuts, fresh fruit for breakfast and/or snack
• To accompany vegetables: goes great with carrot sticks, cucumbers, and pepper strips
• With ethnic dishes: for example, with falafel, with couscous as done in the Middle East.

- 2 cups yogurt
- as needed sterile gauze (or tightly woven fabric)
- as needed paprika
- as needed black pepper
- as needed turmeric
- as needed Extra virgin olive oil
- as needed Fine salt

Preparation for LABNEH YOGURT CHEESE RECIPE
To prepare homemade labneh yogurt cheese, start by lining a sieve with sterile gauze. Pour in the YOGURT and forget about it for 6-8 hours.
As time passes, the YOGURT will lose its whey and become extremely creamy.
After the time has passed, carefully remove it from the gauze and place it in a bowl; mix it with good quality extra virgin olive oil and fine salt.
As I mentioned above, add the spices you prefer to the YOGURT now!
I added paprika, black pepper, and turmeric; then with some UNSALTED BREAD BITS, enjoy it… Bon appétit with the labneh yogurt cheese easily made at home!

This APPETIZER is typical of Middle Eastern cuisine, which spans a vast area between Asia and Africa and is heavily influenced by social customs and religious observance.
LABNEH CHEESE is considered an appetizer, a meze, and is traditionally eaten with hands using bread.
As a spice to accompany LABNEH YOGURT CHEESE, you can add the already indicated ones, sesame seeds, chives, etc.
