Ingredients for LAYER CAKE WITH CREAM BERRIES AND WHIPPED CREAM
- 3 medium eggs
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 cup all-purpose flour
- 1 tsp instant baking powder for desserts
- 3 medium yolks
- 1 medium egg
- 5 tbsps all-purpose flour
- 4 tbsps sugar
- 3 cups milk (I used Whole High Quality Granarolo)
- 10.5 oz mixed berries (I used frozen)
- 2 tbsps sugar
- 2 cups whipping cream
- 4 tbsps sugar
- 1.75 oz dark chocolate (to grate)

PREPARATION FOR LAYER CAKE WITH CREAM BERRIES AND WHIPPED CREAM
For the base, beat the egg yolks with the sugar in a bowl for a long time until you get a light and fluffy mass.
Add the liquids, mixing them with the rest of the batter using the electric whisk at a low speed.
Now add the sifted flour with baking powder, mixing with a flexible spatula.
Pour the very soft batter onto a 12 x 8 inch baking tray, lined with lightly buttered parchment paper.
Bake in a preheated oven at 350°F for 12-15 minutes …please pay attention!
Once baked, let it cool completely and start preparing the custard, which should be a little thicker!
In a bowl, combine the egg yolks and the whole egg, add the sugar and mix well.
Add the flour and mix everything, then add the milk.
Mix well with a whisk and place the liquid in a saucepan, and thicken the cream over low heat.
I didn’t want to flavor the milk, but you can add vanilla extract if you like… or other lemon or almond aromas!
Put the berries in a pan with the sugar and 2 tablespoons of water and let them gently defrost for the necessary time.
Let cool completely.
In our serving dish, place the base and add the berries with some of the liquid formed: not too much, otherwise, for me, it becomes mush!
Put the cream into a piping bag and cover the red fruits completely, leveling everything well.
Now add the whipped cream and just a bit of sugar, leveling the layer cake with cream berries and whipped cream well!
Keep the dessert covered in the refrigerator, and before serving it, grate dark chocolate on top.
