Ingredients RECIPE LAYER CAKE WITH CREAM BERRIES AND WHIPPED CREAM
- 3 medium eggs
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 cup all-purpose flour
- 1 tsp baking powder
- 3 medium egg yolks
- 1 medium egg
- 5 tablespoons all-purpose flour
- 4 tablespoons sugar
- 3 cups milk (for me Whole High Quality Granarolo)
- 2 cups mixed berries (for me frozen)
- 2 tablespoons sugar
- 2 cups heavy cream
- 4 tablespoons sugar
- 1/4 cup dark chocolate (to grate)

FOR THE PREPARATION OF THE RECIPE LAYER CAKE WITH CREAM BERRIES AND WHIPPED CREAM
For the base, beat the yolks with the sugar in a mixing bowl for a long time until you have a light and fluffy mass.
Pour the liquids, mixing them into the rest of the batter, still using the whisk but at low speed.
Combine the sifted flour with the baking powder, mixing with a flexible spatula.
Pour into a baking dish of 12 x 8 inches, lined with parchment paper lightly greased with butter, our super soft batter.
Bake in a preheated oven at 350°F for 12/15 minutes… please pay attention!
Once baked, let it cool completely and start preparing the custard which should be a bit thicker!
In a bowl, put the yolks and whole egg, add the sugar, and mix well.
Pour in the flour mixing everything, then add the milk.
Mix well with a whisk and place the liquid in a saucepan and thicken the cream over low heat.
I didn’t want to flavor the milk, but you can add vanilla extract if you like… or another aroma, like lemon or almond!
Put the berries in a pan with the sugar and 2 tablespoons of water and let them gently thaw for the necessary time.
Let cool completely.
On our serving plate, place the base and add the berries with a little of the formed liquid: not too much, otherwise it becomes a mush for me!
Put the cream in a piping bag and completely cover the red berries, leveling everything well.
Now add the whipped cream just slightly sweetened, leveling the layer cake with cream berries and whipped cream well!
Keep the dessert covered in the fridge and before serving, grate some dark chocolate on top.
