Light Lemon Curd – Light Recipe without Butter

Organic or untreated lemons are essential since we also add the grated zest, and even better if they are local or zero miles;

    Personally, to have a light lemon curd slightly thicker, I have always added, while stirring, the cornstarch which is optional but ensures a creamier consistency.

  • I transfer everything into a small pot and cook over low heat, always stirring with a flexible spatula, until the cream thickens but without reaching the boil!

  • After a few minutes, the light lemon curd cream without butter will be creamy and fluid!

    I remove it from the heat and pour it into a bowl, covering it with plastic wrap until it cools.

    Now I can fill cakes, shortbread, tarts, and taste the lemon cream with pleasure!
