I start the recipe of linguine by toasting the breadcrumbs in a pan with a dash of extra virgin olive oil for a few minutes and then setting the mixture aside.
I put the pot for cooking the pasta with plenty of water on the flame, and when it boils, I add the pasta, cooking it al dente.
In a new pan, I gently melt the salted butter, also adding the juice and the grated zest of the organic or untreated lemon, and I adjust with salt and pepper.
I wash the mint leaves, pat them dry, and after chopping them, I add them to the lemon butter mix in the pan.
I add the damp pasta and, while tossing, I pour the previously toasted breadcrumbs.
I saved a small ladle of cooking water to add only if needed…
I plate the dishes for my guests and serve immediately!
It’s a very quick and very tasty first course… Enjoy your meal and happy cooking! Annalisa
