It is generally prepared by melting butter in water or a mix of water and milk, depending on the preparation we need to do; then the flour is added all at once, vigorously mixed with a spatula or spoon.

Ingredients RECIPE FOR LITTLE CHOUX PASTRIES

  • 4 eggs
  • 150 g flour
  • 250 g water
  • 50 g butter
  • 1 pinch fine salt
  • to taste granulated sugar

TO PREPARE THE LITTLE CHOUX PASTRIES

  • On the stove, put the saucepan with water, a pinch of salt, and the butter and let the fat melt.

  • Add the flour all at once and stir vigorously to create a dough that detaches from the sides of the pan.

  • Off the heat, add one egg at a time, carefully incorporating each egg before adding the next.

    Here is a dough ready, which if dropped from a spatula does not break and falls slowly.

  • Pour seed oil in a pan or wok and at a temperature of about 338°F, start frying small amounts of little fritters of choux pastry, letting them brown in a few minutes of cooking.

  • Drain the fritters of choux pastry on kitchen paper and sprinkle them with plenty of granulated sugar, which should wrap and sweeten every ball.
