Although I am increasingly convinced as the years go by, that a woman’s best friends are diamonds as the curvaceous Marilyn Monroe stated, in a few days Valentine’s Day, the lovers’ holiday, will be celebrated!
Today, therefore, I ventured into a sweet let’s say a cookie with two hearts, loving hearts also with coconut flour inside and filled with a delicate ricotta and coffee cream.
Long live love even if it is difficult to find one to keep over time.
Have a nice day everyone! Annalisa

FOR THE PREPARATION OF THE LOVING HEARTS DOUBLE STUFFED COOKIES RECIPE
all the ingredients in the mixer and after mixing everything together start kneading the dough on the work surface and let it rest for about twenty minutes in the refrigerator.
Meanwhile, prepare the filling by combining the ricotta sifted with sugar, coffee, the pasteurized yolk, and finally the pasteurized egg white whipped to stiff peaks, and set aside.
After resting, roll out the dough and make double hearts, one smaller than the other, and proceed to bake them at 356°F until golden.
Let the loving hearts cookies for Valentine’s Day cool completely, then with the pastry syringe with the star tip make many tufts until you fill the larger cookie, then place the smaller one on the filling after generously dusting it with powdered sugar.
Enjoy the sweet treat with loving hearts! Annalisa
