And today after a long time, I went back to making fresh pasta and prepared the LYING TORTELLINI WITH 3 Ps, that is cream, ham, and peas!
The lying tortellini or surprises are nothing more than a square of pasta without filling and folded like a tortello cappelletto tortellino which I then seasoned with a tasty and caloric dressing like the 3 Ps.
It’s like the first course spaghetti with escaped clams where Escaped means without clams, therefore pasta without shellfish!

LYING TORTELLINI WITH 3 Ps

Ingredients
- 2 eggs
- 200 g all-purpose flour
- 1.8 oz diced cooked ham
- 1/4 cup heavy cream (unwhipped clearly!)
- 2.5 oz frozen peas
- 1/2 shallot
- 1 tbsp extra virgin olive oil
- to taste salt
- to taste pepper

To make the pasta squares I used the tool you see below but I suggest this PASTACUTTER which also has the possibility to cut the pasta with small scallop patterns and I must say that it is much prettier that way!

Steps
If you feel like trying to make lying tortellini I invite you to watch the video even though I think it’s quite intuitive to make this fresh egg pasta and for the dressing:
1) in a preheated pan I put the extra virgin olive oil and the chopped shallot stirring and letting the vegetable stew, adding a little water to calm the sauté
2) then I add the frozen peas for me and with a ladle of water I bring to cooking
3) in a second small pan I put a drop of oil and brown the diced cooked ham for 3/4 minutes
4) in the meantime, in a high-sided casserole, I put water and salt and when boiling I add the lying tortellini which will cook in no time!
5) I drain the handmade fresh pasta and put it in the pan with shallots and peas, adding the diced ham and lastly the liquid fresh cream
6) I also add the grated cheese and mix well with the first course of lying tortellini with cream, ham, and peas!

1) Any dressing is suitable: ragout, sausage, vegetables just stewed in the pan, or grilled… better not to use the mixed melting cheeses because it becomes a mind-boggling mush!
