Ingredients

  • 5.64 oz macaroni (rigatoni penne…)
  • 1.1 lbs mussels
  • 5.64 oz cherry tomatoes (red/yellow/mixed as desired)
  • 1 bunch arugula
  • 1 clove garlic
  • to taste dry white wine
  • to taste extra virgin olive oil
  • to taste salt

Let’s Prepare This Seafood Main Dish Together

  • I start the recipe by cleaning each mussel with the appropriate scrubber and removing the beard,

    After this, I rinse them thoroughly under running water.

  • In a large pan or wok, I add a drizzle of oil and the garlic clove, letting it brown for a few minutes.

    Then I add the mollusks and cover with the lid.

    I turn up the heat to high for 4/5 minutes, deglazing with a bit of dry white wine.

  • When the mussels are open, I shell them and strain the liquid formed with a fine mesh strainer.

  • In another pan, I heat a drizzle of oil and add the cherry tomatoes cut in half, cooking them for a few minutes over medium heat.

    Then I pour in the mussels and part of the filtered cooking liquid.

  • I let the mussels and cherry tomatoes sauce absorb the flavors over medium heat for a few minutes.

    At this point, I cook the pasta al dente, and as soon as it’s drained, I add it to the pan with the seafood sauce.

  • All that’s left is to add the washed, dried, and hand-torn arugula, mixing well, and then serving immediately, adding a drizzle of raw oil and a grind of black pepper if desired!
