MACKEREL with Pink Pepper and Lime

Mackerel with Pink Pepper and Lime today, a bluefish recipe that’s very healthy and also economical! The mackerel or scomber or horse mackerel is a bluefish highly appreciated in cooking for its beneficial omega 3 fatty acids.

Its consumption has increased significantly and it is considered a fish at risk of extinction, with ongoing strategies for sustainable fishing among European Community countries like Scotland and Ireland, and non-member countries like Iceland. The mackerel with its fatty acids reduces cholesterol concentration and protects against cardiovascular diseases.

These fish are not farmed so they do not contain pharmacological residues, and since they have a short life they are unable to accumulate high doses of mercury, unlike large fish.

MACKEREL WITH PINK PEPPER AND LIME

Mackerel with Pink Pepper and Lime

Ingredients for MACKEREL WITH PINK PEPPER AND LIME

  • 4 fillets mackerel (cleaned)
  • 4 limes
  • 2 cloves garlic
  • 2 tablespoons pink pepper
  • to taste Extra virgin olive oil
  • to taste salt

FOR THE PREPARATION OF THE MACKEREL WITH PINK PEPPER AND LIME RECIPE

  • Place the mackerel fillets in a large pot. Cover them with cold water and add some lime slices, pink peppercorns, and a pinch of fine salt.

  • Bring the pot to the stove and let it simmer, poaching the bluefish for about 15/20 minutes.

    Let the mackerel fish cool in the cooking liquid.

  • In a bowl, prepare the emulsion for seasoning by mixing 1/4 cup (60 ml) of olive oil with the juice of 2 limes and sliced garlic.

    Drain the fish to plate them.

  • Remove any bones from the mackerel and arrange the fillets on the plate, then drizzle them with the lime vinaigrette.

  • Add some pink pepper and serve at the table… Enjoy your meal with mackerel with pink pepper and lime!
