The magic cake with vanilla and blueberries that I propose today I thought it would be a flop and honestly didn’t give it a penny, oops a euro, because I feared I was totally incapable of making such recipes and instead it was a success! It seems to me that the 3 layers of the MAGIC CAKE are well visible, what do you think?
I read the recipe and watched a video to make my task easier and I started in full swing to make the magic cake with vanilla and blueberries. The result is delicious, the bottom is a bit thick then you sink into the cream full of blueberries and end with this very soft dough almost like a sponge cake…

Preparation MAGIC CAKE WITH VANILLA AND BLUEBERRIES
1) Preheat the oven to 300/320°F.
2) In a bowl, beat the egg yolks with the sugar whisking them for 3/4 minutes.
3) Now add in order the melted butter, vanilla flavor, flour, water, and milk last.
4) Mix everything with the help of electric beaters.
5) Beat the egg whites until stiff peaks form and add them to the rest of the mixture without over-mixing: there should remain many small clumps of whipped egg whites that are nice and fluffy.
6) Butter well (only butter, no flour) or line the pan with wet and squeezed parchment paper and place the cleaned blueberries at the bottom.
7) Now slowly pour all the fluffy batter over it.Bake the layered cake at 300/320°F for approximately 50 minutes or 1 hour, but adjust as always according to the characteristics of your oven.
9) Personally, after 40/45 minutes I checked, and the center of the magic cake with blueberries and vanilla flavor was still a bit mushy like pudding, so I left the cake for a few more minutes in the oven.
10) After the baking time, let it cool completely, then place the vanilla and blueberry cake in the refrigerator for at least 3 hours – A STRATEGIC AND FUNDAMENTAL STEP for the success of the magic cake!!11) Shall we deny a sprinkle of powdered sugar on the vanilla and blueberry cake? Absolutely not!!
12) Therefore, sprinkle it with light and impalpable sugar, and now serve the magic cake with vanilla and blueberries to your guests!
Bon appétit!! Annalisa
Advice and notes
If you don’t have the 20 x 20 cm square pan, the video I watched before attempting to cook the magic cake said it’s possible to achieve the same result with a classic 22/24 cm pan… I guess experimentation is needed to see if it’s true…
