MARGHERITA CROSTINI

A super easy, budget-friendly idea, the margherita crostini I made quickly using bruschetta bread, those large slices already packaged at the supermarket!

The craving was for a quick snack or a simple homemade appetizer to enjoy before family dinner, and I would say I achieved and finished it in no time.

The blog is full of appetizer recipes because along with desserts, they are my favorite course on the menu, and I have a lot of fun making them and even more tasting them.

Ingredients RECIPE MARGHERITA CROSTINI

  • 4 slices bread (stale, for bruschetta, Tuscan bread ….)
  • 15 cherry tomatoes
  • 7 oz mozzarella (coarsely chopped)
  • to taste salt
  • to taste pepper
  • to taste basil
  • to taste extra virgin olive oil

FOR THE PREPARATION OF THE MARGHERITA CROSTINI RECIPE

1) For this tasty appetizer first, wash and cut the cherry tomatoes in half.

2) In a small pan, I put a couple of tablespoons of extra virgin olive oil, and as it sizzles, I add the tomatoes, season with salt and pepper, and let it stew for 5/6 minutes, stirring to better flavor everything.

3) Preheat the oven to 390/430°F and line the bottom of a baking tray with parchment paper.

4)When the cherry tomatoes are soft, turn off the heat and portion them onto each large slice of bread, then add pieces of mozzarella and a few basil leaves.

5) Adjust the salt, add a pinch of pepper, and bake in static mode for 5 minutes, then switch to grill mode for a couple of minutes or a little more!

6) It’s a silly little idea, but the crunchiness of the bread, the softness of the crumb, the Mediterranean flavor of the CHERRY TOMATOES, and the mozzarella’s stringiness make it a delight!!!!!!!!!!

We can use stale bread, Apulian bread, unsalted Tuscan bread, and not just fresh cherry tomatoes but also good ready-made sauce!

Besides basil, we can also add some dried oregano….

If we want to add flavor, we can also add grated parmesan cheese!
