Ingredients RECIPE MASCARPONE CREAM
- 125 g Mascarpone
- 2 Eggs
- 60 g Sugar

FOR THE PREPARATION OF THE MASCARPONE CREAM RECIPE
Note on egg pasteurization:
This mascarpone cream without cream involves the use of raw eggs.
If you prefer to pasteurize the eggs, you can do so by whisking the yolks with a sugar syrup brought to 121°C, slowly pouring it in while mixing with the electric whisks until completely cooled.
In this way, you will obtain a safe and stable cream, also suitable for those who prefer to avoid the use of raw eggs.
In a bowl mix with the mixer with electric whisks the yolks^*with the sugar until they are frothy and pale.
Add the soft mascarpone and at the lowest speed mix it into the mixture still with the electric whisks.Whip the egg whites until very stiff and add them with slow movements from bottom to top until completely mixed to obtain a soft, silky cream.
Personally, I did not add any chocolate chips or fruit as a decoration to the mascarpone cream because I wanted to enjoy it plain, but if you prefer …
