💡 Practical tip: this meatloaf can be prepared in advance. It keeps in the refrigerator for 2–3 days or can be frozen already cooked and sliced. The sauce should be kept separate and added only at serving time.
The meatloaf can also be frozen: better if already cooked and sliced, separating the slices with parchment paper for better preservation.
It keeps in the freezer for up to 2 months.
Before serving, let it thaw slowly in the fridge and then heat it in the oven or pan.
The sauce, however, is not suitable for freezing.

Ingredients
- 1.1 lbs ground turkey meat (or chicken)
- 1 egg
- 2 slices bread (I use crustless sandwich bread)
- 1.4 oz pistachios (coarsely chopped)
- 1/2 orange (only grated zest)
- as needed milk (to soak the bread)
- 1 tablespoon whole-grain mustard (heaping spoonful)
- 1/2 orange juice
- 1 teaspoon acacia honey
- 1 tablespoon extra virgin olive oil
- as needed salt

Steps
Mix meat, egg, squeezed bread, pistachios, and orange zest. Season with salt and pepper.
Shape the meatloaf and place it on lightly greased parchment paper, closing it slightly “like a candy.”Bake in the oven at 375°F for 40 minutes.
Remove from oven and let rest a few minutes before slicing.In a small bowl, mix the mustard with orange juice, honey, and oil.
Adjust salt and pepper.
P.S. The contrast of citrus + pistachio grains + old-fashioned mustard, the one with granules if you know what I mean, works amazingly and you can use it cold or heat for 20 seconds to make it softer.
Personally, not having much time, I thought of serving this meatloaf with simple boiled potatoes drizzled with the orange sauce and the combination was appreciated!
