MELKTERT South African Milk Tart

I’m preparing for the first time an African recipe, precisely from South Africa, the MELKTERT milk tart, where we have a pastry shell containing this creamy sauce based on milk, eggs, sugar, and vanilla.

Speaking of the shell, in the magazine that inspired the recipe, it’s made of puff pastry, on another site it’s shortcrust pastry, so Annalisa, that’s me, made it using phyllo dough I had in the fridge.

Ingredients

To the ingredients listed below, you need to add butter and flour for the 9.5-inch pan or a spray of special release agent

  • 1 package phyllo dough (puff pastry / shortcrust pastry)
  • 3 cups milk
  • 3 eggs
  • 5 tbsp butter (a little more than a walnut for greasing the phyllo dough sheets of the shell)
  • 1/2 cup sugar (plus a pinch before serving)
  • 1 tbsp vanilla extract
  • 1/3 cup potato starch
  • to taste ground cinnamon (to add to the pinch of sugar before serving the dessert)

FOR THE PREPARATION OF THE MELKTERT South African Milk Tart RECIPE

  • I line the bottom of the already greased pan or lined with parchment paper with a first layer that needs to be buttered a little and then continue arranging about 6/7 sheets of phyllo dough all buttered and leaving the phyllo overhanging the edges of the pan.

    In a small saucepan for the South African milk tart, I let the butter melt in the milk on medium-low heat.

  • In a bowl, I beat the eggs with the sugar for a few minutes, then add the potato starch and vanilla flavoring.

  • I temper with the milk and melted butter mix and let the mixture gently cool.

    Then I pour the liquid into the phyllo dough shell (puff or shortcrust) and sprinkle the surface of the South African Milk Tart MELKTERT with the sugar and ground cinnamon.

  • All that’s left to do is to bake in a preheated oven at 338°F for about 40/45 minutes or depending on the characteristics of our home oven.

  • IT IS MANDATORY TO LET THE SOUTH AFRICAN MILK DESSERT COOL COMPLETELY before slicing and tasting it…

    If you love cinnamon, add another pinch along with powdered sugar before enjoying a big slice!

    I ALMOST FORGOT… if the phyllo used for the edge is too high, lower it with a pair of scissors so that it only contains the cream, just at the level of the cooked milk cream! At least that’s what I did 😊
