Melon, Prosciutto, and Burrata Salad

A non-recipe but a quintessential summer idea, the melon, prosciutto, and burrata salad, a very satisfying cold dish but in essence… I just arranged ready-made foods on a plate, let’s be honest, right?

During the summer season, I think almost all of us have little desire for complicated recipes and long cooking processes, so fresh salads are popular because they are nutritious, easy, and can be prepared with whatever we have at home, from fresh foods to legumes and more!

Today, I added burrata, which I think is fantastic in salad but also in a dressing or on pizza!

It’s a fresh and super-speedy summer dish, perfect when it’s hot!

It’s a colorful and flavorful mix of ingredients that pair wonderfully: the sweetness of the melon, the savory taste of prosciutto, and the irresistible creaminess of the burrata.

An ideal idea for a light dinner or a quick lunch without turning on the stove!

Ingredients

  • 1 melon
  • to taste arugula
  • to taste prosciutto
  • to taste cherry tomatoes
  • 1 burrata
  • to taste extra virgin olive oil
  • to taste salt
  • to taste apple cider vinegar (or lemon juice)
  • to taste pepper (optional)

Let’s Prepare this Fresh Colorful Light Salad Together!

  • 1) Begin the recipe of this quick summer cold dish by thoroughly washing the arugula, the cherry tomatoes, and removing the melon rind.

    2) Dry the vegetables and cut the melon first into wedges then into chunks.

    3) Prepare the vinaigrette by putting EVO oil, a bit of apple cider vinegar or lemon juice, then salt and pepper in a small bowl, mixing everything with a fork to obtain a homogeneous sauce.

    4) In the salad bowl, place arugula, cherry tomatoes, and melon pieces, drizzling it all with the freshly made dressing. Add also the torn burrata with fingers if it’s large-sized or place one burrata per portion if they are small.

    5) Compose individual plates of this delicious no-cook summer recipe, placing a couple of slices of prosciutto rolled up like a rose on each.

    Fresh, fast, and delicious… enjoy your meal!

1) If you want to add a crunchy note to the arugula, cherry tomato, prosciutto, and burrata salad, add some almond flakes, perhaps previously toasted with care in a pan so that it releases all its aromas!

2) Don’t like burrata? Well, you can add some fresh mozzarella, some crescenza, or robiola pieces.

3) Clearly, dress the salad ONLY at the moment of eating it at the table, otherwise…
