INGREDIENTS
- 11 oz egg chitarra spaghetti (or other No. 3/5/7 bucatini and/or linguine)
- 10 fillets anchovies in oil
- 1 tablespoon capers (in brine)
- 1 clove garlic
- 2 fresh chili peppers
- to taste chopped parsley
- to taste extra virgin olive oil
- to taste salt

FOR PREPARING THE MIDNIGHT SPAGHETTATA RECIPE
In a small saucepan I put a little extra virgin olive oil, the peeled garlic and the anchovy fillets, letting them gently melt over low, gentle heat.
I add the capers drained from their preserving liquid and the chili peppers, whole or chopped as you prefer…
I leave it on the heat for a few more minutes then turn it off but keep it warm.
In the meantime I put the pot for cooking long pasta on the heat for spaghetti or another pasta of your choice and when it boils I salt the water and add the pasta.
I drain the pasta al dente and pour it into the pan with the quick sauce of anchovies, capers and chili and toss for a couple of minutes, also adding some fresh chopped parsley and a pinch of salt but be careful because the other ingredients are already salty!
Et voilà — we’re ready to plate the individual dishes for our guests and bring them straight to the table!
