Mini Spaghetti Frittatas with Salami and Scamorza in Air Fryer

Do you have leftover spaghetti and don’t know what to do with it? Turn it into something quick and irresistible: mini spaghetti frittatas with salami and scamorza cooked in the air fryer ready in 12 minutes.

A dinner-saving recipe, perfect for recycling the previous day’s pasta and creating a new, flavorful dish ready in 12 minutes.

Simply combine eggs, diced Milano salami, scamorza, and a pinch of herbs to make individual servings that everyone will love, both adults and kids.

Cooked simply with the air fryer, they’re also ideal for those who want to avoid using a traditional oven or save time and enjoy some relaxation!

These mini spaghetti frittatas seasoned and flavored with salami and scamorza are perfect for an appetizer, a tasty brunch on Sundays, to take to the office for lunch, or as an alternative idea for a savory buffet.

Ingredients

  • 2 eggs (beaten)
  • 150 g spaghetti (already cooked)
  • 50 g salami (diced)
  • 70 g scamorza (diced or julienned)
  • 1 tablespoon grated Parmesan cheese
  • to taste herbs (parsley and basil)
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil (spray and just a little drop)

To prepare these individual frittatas, let’s start with …

  • In a large bowl, I put the cooked spaghetti (preferably cold), the beaten eggs, the Parmesan, the scamorza, the salami (Milano or Napoli) in pieces, finely chopped herbs of your choice. Adjust salt and pepper.

  • Mix well until a well-bound mixture is obtained, and for convenience, but I didn’t do it, you can also cut the length of the spaghetti a bit with appropriate kitchen scissors to facilitate insertion into the cupcake liners.

  • Pour the mix into the cupcake liners and here I open a parenthesis.

    If you have aluminum liners, great, you will need to grease them and perhaps sprinkle them with breadcrumbs, same if they are in silicone!

    If you don’t have them like me, use paper ones using perhaps 3/4 for each mini frittata so that they stay upright and don’t spread too much!

  • Now, I only need to cook in air fryer at 356°F for 10/12 minutes, until completely golden.

    Please check that they are well set and crispy on the surface!

  • Once lukewarm, I remove them from the molds, place them on the serving tray, and we’re ready to enjoy them!

The mini frittatas in the air fryer are a single-serving first course to be served hot or warm: they are ideal for buffets, picnics, or tasty appetizers. They keep for 1 day in the refrigerator, to be reheated for a few minutes in the air fryer before enjoying them!
