A small plumcake today, a mixed fruit cake with dried and dehydrated fruits, a dessert to enjoy at breakfast with a herbal tea, some café au lait, and a very aromatic and fragrant tea I would say….
I made half a recipe I saw on a French site, it has no oil, no butter, very little sugar and flour, and it is very easy to make.
I preferred to use the mixed dried fruits without a preliminary soak in a splash of rum, which would indeed be great according to my more alcoholic side haha!
To make this dessert more indulgent, we could also serve it with some custard, which, being fluid and vanilla-flavored, would envelop this mixed fruit cake perfectly!

Ingredients for MIXED FRUIT CAKE RECIPE
- 2 eggs
- 2.3 oz brown sugar
- 1/2 pod vanilla
- 3.5 oz flour
- 1/4 teaspoon baking powder for desserts
- 8.8 oz dehydrated fruit
- 2.1 oz whole hazelnuts
- 2.1 oz blanched almonds (whole)
- as needed powdered sugar

Preparation of the MIXED FRUIT CAKE RECIPE
Mix and beat the eggs with the brown sugar, then add the vanilla extract.
Beat until the mixture is light and frothy.
Sift the flour with the instant baking powder and add it to the mixture.
Lastly, add all the dried and not dried fruits…
Prepare the mold with a special release agent or with damp, well-squeezed parchment paper, then pour in the mixed fruit cake batter, leveling well on top.
I just need to bake it at 338°F in static mode, cooking until done, about 45 minutes, or depending on your oven.
All that remains is to cut it into nice slices and serve it for breakfast or a snack, simply or accompanied by custard!
