A quick and tasty recipe, the mixed grilled skewers with shrimp tails and fresh pineapple chunks, a preparation that can be an appetizer or a very delicious and slightly spiced main course!
These flavorful skewers with shellfish and pineapple are very simple to prepare, and to make them even more intriguing, I made a spicy sauce (with EVO oil, curry, paprika, turmeric, and 3 drops of Tabasco) which I brushed over the mixed grilled skewers before serving them at the table.
Before cooking them on the hot grill, I left the wooden skewers soaked in cold water for about 30 minutes to prevent the wood from scorching.
If you prefer non-spicy skewers, add some aromatic herbs like thyme and avoid the stronger spices…
You can also add to the sauce for brushing over the shrimp and pineapple skewers some grated fresh ginger pulp which gives that delicious and fresh lemon aroma…
If you prepare this quick recipe with pineapple and shellfish as an appetizer, use small skewers that can hold a maximum of 3 pieces of food.

Ingredients
- 9 oz pineapple (freshly cut into cubes)
- 26 shrimp tails (deveined)
- 1 pinch sweet paprika
- 1 pinch turmeric powder
- 1 pinch curry
- 2 tablespoons extra virgin olive oil
- 1 1/3 teaspoon salt
Preparation
• As I wrote in the introduction to the recipe, soak the wooden skewers and leave them for at least 30 minutes to prevent them from blackening during grilling.
In this time, let’s also prepare the spicy sauce by placing in a small glass the spices such as turmeric, curry, paprika, and Tabasco.
Mix well, add the extra virgin olive oil, and emulsify the sauce, then set it aside.
Proceed to make the mixed shrimp and pineapple skewers by inserting shellfish and fresh pineapple chunks as desired.
Place the grill over a high flame and as soon as it’s hot, grill the mixed grilled skewers for 2/3 minutes per side, brushing them with the spicy sauce with mixed spices.
It will take just a few minutes to achieve a tasty and flavorful dish to serve at the table as an appetizer or a second course with an exotic and intriguing aroma.
Serve the mixed grilled skewers with fresh white wine and enjoy your meal!
