PREPARATION FOR MIXED OVEN-ROASTED VEGETABLES RECIPE

  • with lots of vegetables of each season of the year, so just have the desire and you can prepare tasty and excellent dishes, either as a side dish or as a single dish with boiled eggs, cheeses, etc.

    So…I peel the vegetables that need it, like sweet potato and carrot!

  • I remove the hardest part of the radicchio and the Belgian endive, and take the healthiest florets of the two types of cabbage.

    I wash and pat dry the just-prepared veggies with a cloth or some kitchen paper and place them in a rather large bowl.

  • In a bowl, I put EVO oil, turmeric powder, ground black pepper, a very fine chop of thyme and rosemary, and a few sliced garlic cloves.

    Adjust with salt and pepper and mix well, trying to ensure that all vegetables are flavored with herbs and spices.

  • I arrange the vegetables in the baking pan in groups or at random and then bake at 340°F for about 40 minutes, but as always, it is advisable to check the cooking and, if necessary, add a drop of vegetable broth or water!

  • Once cooked, let it cool for a few minutes and bring to the table this tray of mixed vegetables to accompany both meat and fish dishes!
