Mixed Roasted Vegetable Tray

It’s a time when we eat a lot of vegetables at home, and today I proposed to my boyfriend Andrea a mixed roasted vegetable tray, gratin and tender.

The addition of julienne mozzarella then makes it super tasty and very stringy, which is quite important for my small family!

Ingredients

  • 1 broccoli
  • 3 carrots (julienne)
  • 1 onion (medium)
  • 5.3 oz mozzarella (julienne)
  • 4 eggs
  • to taste salt
  • to taste pepper
  • to taste basil
  • to taste extra virgin olive oil (for the tray)
  • to taste breadcrumbs (for the tray)

FOR THE PREPARATION OF THE MIXED ROASTED VEGETABLE TRAY RECIPE

  • I lightly grease the tray, sprinkle it with breadcrumbs, and start preparing the chosen vegetables.

    With a sharp knife, I thinly slice the broccoli florets, then add the carrots.

  • I place the sliced broccoli.

  • I add the julienne carrots.

  • then I add the onion and eggs.

  • and then the mozzarella and basil.

  • I season with salt and pepper and gently mix everything; it’s clear that this mixing of vegetables can be done in a bowl and then poured into the just-oiled tray.

  • Now I need to bake at 356°F (180°C), letting the mixed vegetable tray slowly cook and form that delicious crust on top.
