It’s a time when we eat a lot of vegetables at home, and today I proposed to my boyfriend Andrea a mixed roasted vegetable tray, gratin and tender.
The addition of julienne mozzarella then makes it super tasty and very stringy, which is quite important for my small family!

- 1 broccoli
- 3 carrots (julienne)
- 1 onion (medium)
- 5.3 oz mozzarella (julienne)
- 4 eggs
- to taste salt
- to taste pepper
- to taste basil
- to taste extra virgin olive oil (for the tray)
- to taste breadcrumbs (for the tray)

FOR THE PREPARATION OF THE MIXED ROASTED VEGETABLE TRAY RECIPE
I lightly grease the tray, sprinkle it with breadcrumbs, and start preparing the chosen vegetables.
With a sharp knife, I thinly slice the broccoli florets, then add the carrots.
I place the sliced broccoli.
I add the julienne carrots.
then I add the onion and eggs.
and then the mozzarella and basil.
I season with salt and pepper and gently mix everything; it’s clear that this mixing of vegetables can be done in a bowl and then poured into the just-oiled tray.
Now I need to bake at 356°F (180°C), letting the mixed vegetable tray slowly cook and form that delicious crust on top.
