Today I had an urgent need and craving for vegetables, and since I didn’t have lettuce, tomatoes, or anything else, I decided to make the recipe for mixed vegetable fritters, which, paired with a mozzarella, became my lunch!
They are thin and delightful like vegetable pancakes and can become a complete dish if accompanied by a small cheese, hard-boiled eggs, or a buffalo mozzarella…

MIXED VEGETABLE FRITTERS

Ingredients for MIXED VEGETABLE FRITTERS RECIPE
- 14 oz mixed raw vegetables (I used potatoes, zucchini, carrots)
- 1/2 cup flour
- 1/2 cup breadcrumbs
- 2 Eggs
- 3 tbsps grated Grana cheese
- to taste water
- to taste parsley (chopped)
- to taste salt and pepper
- to taste seed oil (for the mold)

Preparation for MIXED VEGETABLE FRITTERS RECIPE
Wash and clean the vegetables we’ve chosen from any waste; as mentioned, I used carrots, zucchini, and potatoes. With a wide-hole grater, I julienned all the vegetables and put them into the same bowl.
Add the beaten eggs, the flour, the breadcrumbs, the chopped parsley and 2 tablespoons of grated Grana cheese.
Mix everything, adding a little water to make the mixture slightly more fluid: I added about 3.4 – 4.1 fl oz.
Season with salt and pepper. Line a baking mold (I used a square 8 x 8 inches) with parchment paper and lightly oil it with seed oil.
Pour the mixture, leveling it well, and then sprinkle with the remaining Grana cheese.
Bake in a preheated oven at 392°F for about 25 minutes or according to the characteristics of your appliance.
Once cooked, let it cool, then cut into squares or rectangles and serve the mixed vegetable fritters at the table!
