Moelleux with Oranges Sweet, Simple, and Spectacular Fruit Cake

Ingredients

  • 5 oranges (untreated)
  • 1 1/2 cups all-purpose flour
  • 1/2 packet baking powder
  • 3 eggs
  • 14 tbsps butter (softened)
  • 5/8 cup granulated sugar (for the batter)
  • 1/2 cup granulated sugar (for the syrup)

Steps

  • Grease and flour an 8-inch round pan.
    Wash the oranges, then peel the zest of one fruit and juice three of them.
    Cut the other orange into thin slices, keeping the peel, and set aside.

  • In a large bowl, pour:
    1/2 cup fresh orange juice
    the grated zest
    the melted and cooled butter
    5/8 cup sugar
    sifted all-purpose flour
    instant baking powder
    and mix everything well with a marisa spatula.

  • Then add the eggs one at a time, mixing carefully after each addition, until you get a smooth and homogeneous dough.
    Then pour the obtained batter into a previously greased and floured pan or sprayed with the appropriate oil.

  • Then bake the moelleux orange cake for about 40 minutes at 356°F static or according to the characteristics of your home oven and always do the toothpick test to check for perfect cooking.
    While the citrus cake is baking, prepare the syrup and the candied oranges.

  • In a saucepan, put the sugar with 1/2 cup of water and the remaining orange juice.
    Let it simmer for a few minutes and add the orange slices, letting them cook briefly while keeping them whole.

  • Once out of the oven, let the cake cool for a few minutes, then immediately brush the surface with the hot syrup.
    Then decorate with the orange slices, overlapping them, and let cool completely before serving.

Important Note

The butter is intentionally abundant: it may seem a lot, almost excessive, but it is precisely this that makes the cake soft, moist, and melt-in-the-mouth, in the style of classic French moelleux. Reducing the amount would result in a different cake, drier and less enveloping.
