MOELLEUX with Yogurt and Blueberries WITHOUT BUTTER

Unfortunately, even though I dusted the blueberries, or rather the big blueberries since they were so plump, most of them cheerfully sank to the bottom… and I would have preferred NO!
Nevertheless, the moelleux cake with yogurt and blueberries without butter is super soft, delicious, fragrant, and will be our breakfast and snack tomorrow, and I’ll even gift a nice big slice to Fede, my neighbor!
Definitely a cake to remake, keeping the batter super soft and fluffy and adding more fruits, maybe like cherries and peaches, which will soon appear on fruit and vegetable stands…

MOELLEUX WITH YOGURT AND BLUEBERRIES

Moelleux with Yogurt and Blueberries WITHOUT BUTTER

Ingredients for MOELLEUX WITH YOGURT AND BLUEBERRIES

  • 1 cup and a half of plain yogurt
  • 1 3/4 cup vegetable oil (I use corn)
  • 4 cups and a half of all-purpose flour
  • 3 cups sugar
  • 18 g baking powder
  • 1 tablespoon vanilla extract
  • 4 medium eggs
  • 12.7 oz blueberries (I prefer fresh, but frozen works too)

  • Stand Mixers

FOR THE PREPARATION OF MOELLEUX WITH YOGURT AND BLUEBERRIES

  • In a large bowl, beat thoroughly the whole eggs with the sugar and the vanilla extract.

  • Sift the flour with the instant baking powder and add it to the egg and sugar mixture, using electric whisks at low speed.

  • Now pour in the vegetable oil and plain yogurt and combine the ingredients with a soft spatula.

  • Wash, dry, and flour the blueberries and remove the excess by passing the fruit through a sieve.

    Add the berries as well, mixing gently.

  • Grease and flour a 9-inch round pan and pour in the batter for the yogurt and blueberry cake.

    Level well and bake in a preheated oven at 350°F and bake for about 40/45 minutes, always checking the baking with a toothpick.

  • Once baking is complete, let the cake cool completely.

    Dust with powdered sugar and serve immediately at the table!
