Mom’s Stuffed Raw Tomatoes

My mom’s name is Maria, she is a wonderful cook, and from her, all three of us sisters have learned many recipes and the joy of cooking and experimenting in the kitchen.

In summer, Maria prepares great cold pasta salads but also these mom’s stuffed raw tomatoes, simple San Marzano or vine tomatoes, emptied of seeds and super delicious with a quick filling that is really tasty for us!

These tomatoes are prepared in 5 minutes and kept in the fridge until it’s time to enjoy them because the longer they rest, the more flavorful they become and they’re amazing!

The mom’s stuffed raw tomatoes are a simple, fresh recipe, ideal for summer!

They are made with simple and genuine ingredients: breadcrumbs, garlic, parsley, and lots of mom’s love!

Great as an appetizer but also as a light side dish, they are ideal for anyone seeking a vegetarian diet, flavorful and no-cooking required!

Ingredients MOM’S STUFFED RAW TOMATOES RECIPE

  • 3 not too ripe tomatoes
  • 3 tablespoons breadcrumbs
  • 1 tablespoon Parmesan cheese (grated)
  • garlic
  • Parsley (finely chopped)
  • to taste Extra virgin olive oil
  • to taste Salt and pepper

PREPARATION MOM’S STUFFED RAW TOMATOES RECIPE

  • Wash, cut in half, and empty the selected tomatoes of seeds.

    In a bowl, mix the breadcrumbs and grated Parmesan cheese.

  • Add a pinch of chopped garlic and a lot of finely chopped parsley.

  • Salt and pepper, then fill the raw tomatoes emptied of seeds with this mixture.

    Pour some extra virgin olive oil into each half-stuffed tomato.

  • Cover with plastic wrap and place the mom’s stuffed tomatoes in the refrigerator.

  • When it’s time to enjoy this tasty side dish, sprinkle everything with more parsley and serve at the table! Very easy and so delicious enjoy your meal with mom’s stuffed tomatoes!

Tips and Notes

To be honest, I put exactly half the amount of Parmesan as breadcrumbs, but you need to adjust the cheese according to your taste because, depending on its aging, its flavor may be very strong and overshadow the rest!
