A lovely dish of vegetables and legumes with the recipe for my way poke with lentils, feta, and avocado, simply dressed with high-quality extra virgin olive oil!
Eating vegetables and legumes is a great idea for maintaining a healthy and nutritious diet, and now that the warm season is approaching, we’ll have more and more opportunities to buy ripe and quality vegetables to prepare many colorful and balanced dishes!
Although the temperatures are currently wintery, we are heading towards the summer season, and the ideal dish that reminds us of sun and warmth is a nice single dish like a fresh and tasty salad, with appetizing ingredients full of vitamins and minerals!
As the heat rises, we’ll be less inclined to spend time in the kitchen, and the big salad will be the must of the summer season. Apart from the usual leaf salad, we can add:
– yellow and red cherry tomatoes;
– cucumbers;
– julienned carrots;
– peppers;
– arugula;
– celery and much more.
Let’s not forget to add a protein portion with legumes like chickpeas, beans, lentils, and let’s not underestimate the nutritional power of grains like barley, spelt, and quinoa, a gluten-free pseudo-cereal considered a super-food, one of the world’s most nutritious plants!

Ingredients MY WAY POKE with lentils, feta, and avocado
- 8.8 oz cooked lentils
- 2 avocados
- 5.3 oz feta
- 1 carrot
- 1/2 red onion
- to taste extra virgin olive oil
- to taste salt
- to taste chopped parsley
- to taste pepper (if desired)

FOR THE PREPARATION OF MY WAY POKE with lentils, feta, and avocado
I put the well-rinsed lentils from the preservation liquid in a bowl,
I then add the peeled and chopped carrots and also remove the skin and pit from the avocado.
I cut the avocado into slices and add them to the bowl of vegetables and legumes.
I chop the red onion into small pieces, add it to the rest of the ingredients, and mix everything well.
I crumble the feta, the famous Greek goat cheese, coarsely and then dress well with extra virgin olive oil.
I adjust the salt (beware of the feta’s saltiness), add a pinch of pepper if desired, some chopped parsley (which is always very good and rich in vitamin A and C), and serve at the table.
