No-bake dessert with wafer, cream, and fruit is a fresh and delicious cake with a luscious filling made with Philadelphia cheese, white chocolate, and whipped cream!
The cream is soft and delightful and I tried to enrich the dessert with plenty of fresh fruits like strawberries, blackberries, pineapple, grapes, and blueberries. This no-bake dessert is really delicious and also suitable for warmer temperatures!
I did not add sugar because the white chocolate is sweet enough for me, but if you prefer, you can add 1-2 tablespoons of powdered sugar to the cream, which blends better with the mixture.
For the wafer perimeter* I left the biscuits whole, but since I used so much fruit, you might consider trimming about 1/2 inch to 5/8 inch … but make your own considerations and decide what you prefer… *I used a cake ring for this cake, but a springform pan will do just fine.

Ingredients NO-BAKE DESSERT WITH WAFER CREAM AND FRUIT
- 1 vanilla wafer
- 1 1/4 cups Fresh liquid cream
- 8.8 oz Philadelphia (or similar)
- 7 oz white chocolate
- as needed fresh fruit

PREPARATION OF THE NO-BAKE DESSERT WITH WAFER CREAM AND FRUIT
Line a springform pan and place the wafers around the perimeter and on the bottom, then start preparing the soft cream.
Put half of the fresh liquid cream in a small pot and bring it almost to a boil.
Remove from heat and add the white chocolate, stirring until completely melted.
Once cooled, with the electric whisk, add the already softened Philadelphia cheese with a spoon.
Whip the remaining liquid cream and add it to the mixture with a spatula, creating a soft and delicious cream.
Pour the cream over the wafers arranged in the springform pan, and place the no-bake wafer and cream dessert in the refrigerator.
Now, wash, dry, and cut the chosen fruit, arranging it on the cake already filled with cream.
I added strawberries, blackberries, some grapes, a few blueberries, and pieces of pineapple, adding some mint leaves here and there.
Keep the dessert with cream and fruit in the refrigerator until serving time, and enjoy your meal!
