No-Bake Oreo and Strawberry Cake

A delicious treat, this no-bake Oreo and strawberry cake is an OREO cheesecake with an Oreo base, a delightful mascarpone and cream filling, and a topping of exquisite strawberries that’s very pleasant!
In Bologna, there’s still a very fresh breeze, especially when I go out at 7 for the newspaper and breakfast, but the desire for more summery foods and preparations is strong, and here’s a perfect dessert with strawberries for the warmer season!

How to vary the filling of the no-bake Oreo and strawberry cake?
I put a delicious and calorie-rich cream, but you can substitute for example the MASCARPONE with Philadelphia cream cheese or similar in the same indicated amount (250 grams / 8.8 oz), also robiola is a creamy cheese that goes well with sweet preparations, so keep that in mind!

Can I use other fruits in the OREO cheesecake?
If you don’t like STRAWBERRIES personally, I would use exotic fruits* like mango and papaya, cooking them in a pan with a little sugar and a splash of water, letting them gently soften to cover the creamy layer of cheese, sugar, and crushed Oreo cookies.

*QUANTITIES FOR EXOTIC CREAM WITH MANGO
Approximately the quantities for an exotic coating of a 20 x 20 cm (8 x 8 inches) mold are: 2-3 fruits (mango and/or papaya),
– 30-40 grams (1-1.5 oz) of powdered or granulated sugar,
– 300 grams (10.5 oz) of water.
Put the peeled and diced fruits in a syrup of water and sugar and leave over low heat for about 15 minutes so they soften.
Ensure it doesn’t dry too much, then leave the chunks or blend with a mixer if you prefer a smoother, more homogeneous sauce. Once cooled, pour it over your dessert, and voilà. The game is on!

Oh, I forgot… a pinch of fresh grated ginger might work well, what do you think??

Ingredients

  • 7 oz Oreo® cookies
  • 3.5 tbsp butter
  • 1.3 cups fresh whipping cream
  • 8.8 oz mascarpone
  • 3 tbsp sugar
  • 5.3 oz Oreo® cookies
  • 14 oz strawberries
  • 1.5 tbsp sugar
  • 3.5 tbsp water

  • Blender / Mixer (or stand mixer)
  • Kitchen scale

Recipe Preparation for No-Bake Oreo and Strawberry Cake

  • 1) To prepare the No-Bake Oreo and Strawberry Cake, first make the base by mixing the crushed cookies with the butter.

  • and then pressing them into a 20 x 20 cm (8 x 8 inches) mold. You can use a spoon, a glass, a meat tenderizer, or any kitchen tool you have!

  • 2) Then I put everything in the refrigerator and proceed to make the filling cream.

  • 3) In a bowl, I pour the mascarpone and start working it with electric beaters, also adding the sugar and whipped cream.

    4) I mix well to combine, then add the crushed Oreo cookies.

  • 5) Mix the cream well with the crumbles

  • for a soft and delicious mixture.

  • 6) Pour the cream over the Oreo and butter cookie base, then return everything to the fridge while making the strawberry sauce to cover the no-bake Oreo and strawberry cheesecake.

  • 7) Put the water and sugar over low heat to make a syrup, and add the wash and hulled strawberries cut into slices.

    8) Let the sauce thicken gently and the fruit soften, then pour everything cold over the Oreo and cream cake.

  • 9) Cover with plastic wrap and leave in the refrigerator until it’s time to serve, and… bon appétit!
