No-Bake Strawberry and Pistachio Cake

The no-bake strawberry and pistachio cake is a creamy cheesecake without gelatin and very rich in fruit with the pleasant crunchy note of chopped pistachios.

As a creamy cheese, I almost always use Philadelphia or Exquisa, but it’s very tasty even if you “cut” the creamy cheese with Robiola.

If you prefer, increase the weight of cookies and butter proportionally by raising the edge of the no-bake strawberry pistachio cake shell, a variant that will change the appearance of the cheesecake but certainly not its goodness!

Instead of the strawberry coulis, you can use other berries like blueberries, sprinkle with powdered sugar, make dollops of whipped cream….

NO-BAKE STRAWBERRY AND PISTACHIO CAKE

Ingredients

  • 6.3 oz cookies (dry, for me Digestive)
  • 6.3 tbsp butter (melted and warm)
  • 14 oz cream cheese
  • 9 oz mascarpone
  • 3.5 oz condensed milk (for me unsweetened)
  • 2 tbsp lemon juice
  • 3 tbsp powdered sugar
  • 2 tbsp chopped pistachios (unsalted)
  • 15 strawberries (indicative number of strawberries)
  • 1 tsp granulated sugar

FOR THE PREPARATION OF THE STRAWBERRY AND PISTACHIO CAKE

  • • To prepare this strawberry and pistachio cake, first, blend the cookies in a mixer and then mix them well with the melted butter.

  • With this mix, prepare the base of our dessert by pouring it onto the bottom of the springform pan previously lined with parchment paper placed on the outer edge of the pan.

  • • Press very well the cookie shell compacting it with a spoon.

    Then place the pan in the refrigerator and proceed to prepare the filling cream.

  • For the filling, place the cream cheese in a large bowl, add the condensed milk, 1 tablespoon of lemon juice, and the sugar.

  • • Using electric beaters, mix everything, also adding the mascarpone to obtain a soft and delicious cream.

  • • Place the filling cream in the refrigerator and proceed to prepare the strawberries for decorating the edge of the no-bake fruit cake.

  • • Wash and pat dry the strawberries and slice them thinly, placing the slices all along the edge of the no-bake strawberry cake.

  • Now pour the filling and level it well with a spatula.

  • • Place back in the refrigerator and prepare the strawberry coulis, saving 1 or 2 strawberries to place in the center of the dessert if you like the way I decorated it.

  • • Then cut the remaining strawberries into pieces and place them in a small saucepan with the teaspoon of granulated sugar and the tablespoon of lemon juice, and leave them on low heat to soften for about 15 minutes.

    • After the time, you can blend the mixture to make it uniform and creamy or leave some fruit more substantial as I did…

    • Now decorate the center of the no-bake strawberry and pistachio cake with the cold coulis, decorate with one or two strawberries sliced in the center, and sprinkle the dessert with chopped pistachios
