I believe the Novara cookies are the simplest cookies I have ever made in my life, very tasty, one leads to another, and not having butter, they have a nearly infinite shelf life, especially if stored in the classic tin box.

What are the ingredients for Novara cookies?? Well, the classic ones for making sweets like eggs, sugar, and flour, all measured to the same weight, it couldn’t be simpler, haha!

I made these Novara cookies the other afternoon when I realized that despite making new recipes almost every day, I was without even a miserable cookie for coffee!!

The recipe comes from a must among Italian cookbooks, “Il talismano della felicità” by Ada Boni, a splendid book gifted to me by my ex-father-in-law, a cultured and kind gentleman native of Ischia, who is unfortunately no longer with us, and who, accustomed to excellent Campanian cuisine, perhaps feared for his poor child in the hands of this Romagna woman.

The Novara cookies are also butter-free, so there’s even more reason to prepare them in large quantities for the whole family’s breakfast!

No, I’m kidding, we always loved and respected each other up to the day of his passing with much affection…

  • 2 Medium eggs
  • Flour same weight as eggs
  • Sugar same weight as eggs

Preparation NOVARA COOKIES RECIPE

  • Weigh the eggs with the shell and calculate the same weight for both the flour and sugar. The original recipe advises removing two or three whites per kilogram of whole eggs, so when breaking the second egg, it’s advisable to remove a bit of white.

    Start whipping the eggs and sugar until you have a frothy and light mixture, then add the flour, preferably with a sieve, always mixing well.

  • Grease the baking tray you will use to bake these Novara cookies with a thin layer of butter (just a dab), then flour the surface, ensuring to remove the excess by tapping the tray, leaving just a shadow of it in the pan.

    Using a piping bag, create sticks, making sure to leave a little space between each Novara cookie.

  • Place the tray in a preheated oven at 338/356°F for a few minutes until you see them just starting to color. This is the second time I’ve made them, and I left them in the oven a moment longer to make them even crunchier.

  • Immediately remove them with a knife or spatula while still hot and place them to cool on a wire rack.

    Now resist the temptation to taste them and bring them immediately to the table because Novara cookies are amazing and will disappear quickly!

Advice and Notes

Store the Novara cookies in a well-sealed tin box, but I doubt you will succeed given their goodness! These cookies, being composed of only sugar, flour, and eggs, are perfect for the little ones and also for grandparents, and they are exceedingly easy! The Talisman of Happiness suggests leaving them to rest for 15 minutes before baking to stabilize them, but I didn’t do that, oops, so if you’re in a hurry, the Novara cookies will be just as good if baked immediately after arranging them in sticks on the tray!
