These Nutella shortbread cookies are double, soft, and irresistible: a simple recipe perfect for breakfasts, snacks, and delicious gifts. Made with a few ingredients, they always impress.

The Nutella shortbread cookies keep very well:
• At room temperature:
In a tin box or a closed container, they last 4–5 days without losing crunchiness.
• In the fridge:
Don’t do it haha, because the shortbread absorbs moisture and becomes soft.
• Freezing:
You can freeze only the cookies that are already baked but not filled, up to 2 months.
When needed, let them thaw at room temperature and fill with Nutella.
• If filled:
They keep perfectly at room temperature for 3–4 days.
Nutella doesn’t go in the fridge and doesn’t spoil.

Ingredients

  • 1 egg
  • 4.5 oz butter (soft)
  • 2 cups all-purpose flour
  • 0.5 cups sugar
  • 1 tsp vanilla extract
  • 12 tsps Nutella®
  • as needed cocoa powder

Steps

  • In a bowl, mix the soft butter with the sugar and vanilla extract.

    Then add the flour and mix everything until you have a homogeneous dough.

  • Roll out the shortbread dough between two sheets of parchment paper to a thickness of about 0.2 inches and place it in the refrigerator to rest for 60 minutes.

  • Using the chosen molds, cut the dough for the cookie base (whole without design) and also make the top part, being careful to first dip the mold in cocoa powder.

  • Re-knead the scraps and finish making the double cookies filled with Nutella©.

    Place the cookies on the baking tray lined with parchment paper and bake in a preheated oven at 356°F for about 8/10 minutes.

  • Once baked, let them cool, preferably on a wire rack.

    Then proceed with filling by placing a teaspoon of Nutella© in the center of the cookie and then overlaying the shortbread with the mold dipped in cocoa.
