Ingredients for OMELETTE ROLLS RECIPE

  • 8 medium eggs
  • 12 slices speck
  • 1 tablespoon cornstarch (or potato starch)
  • 3 tablespoons grated Parmesan cheese
  • Parsley (chopped)
  • 12 slices Parmigiano Reggiano slices (or scamorza or …)
  • to taste salt and pepper
  • 1/2 cup Milk (I use Zymil)
  • Extra virgin olive oil (for the mold)

PREPARATION FOR THE OMELETTE ROLLS RECIPE

  • Preheat the oven to 375°F. In a bowl, beat the whole eggs, cornstarch, grated Parmesan, and milk. Blend the liquids well, mixing the ingredients thoroughly.

  • Add the chopped fresh parsley, mixing well and adjust the seasoning with salt and pepper.

    Brush the baking pan with olive oil and pour in the egg mixture.

  • Bake the simple OMELETTE with eggs for about 12/13 minutes and let it cool.

    Turn the baked circle over onto a work surface and cut 12 omelette wedges with a knife.

  • Fill each omelette wedge with a slice of cheese, roll it up, and wrap the roll with a slice of speck.

    Place the omelette rolls on a plate lined with parchment paper and grill them for a few minutes, just enough to melt the chosen cheese.

  • Once cooked, let them cool for a few minutes and serve the omelette rolls on the table, which you will still find delicious even at room temperature.
