Orange and Lemon Cake

I love the taste of citrus and sometimes I just feel the need to eat an orange, to smell that peel broken with my hands and the juice that is so intense and… after seeing on this blog an orange cake I thought, since I also had lemons, of making an orange and lemon cake and here is the result.

Super soft, good, and beautifully glazed, the orange and lemon cake is ready for a super delicious snack…. shall we prepare it together? How about it???

INGREDIENTS FOR ORANGE AND LEMON CAKE

  • 2 Eggs
  • 7/8 cup oz granulated sugar
  • 2 cups cups all-purpose flour
  • 2 tsp tsp baking powder
  • 1 orange (zest and juice)
  • 1 lemon (zest and juice)
  • 7 tbsp milk
  • 8 tbsp vegetable oil (I use corn oil)
  • 1 lemon
  • 1 orange
  • 7/8 cup oz granulated sugar
  • 1/6 cup cups water
  • as needed water
  • as needed powdered sugar
  • 2 drops lemon juice (2/3 drops)

How to Make Orange and Lemon Cake

  • Wash both the lemon and the orange thoroughly.

    Grate their zest and squeeze the juices, setting them aside.

    With electric beaters, whip the whole eggs with the sugar into a soft, light foam, then add the freshly grated citrus zests.

  • Now add the lemon and orange juices, alternating with the flour sifted with the baking powder.

    Pour the milk and vegetable oil into the batter, mixing well.

    Butter and flour the pan, then pour the mixture into it.

  • Preheat the oven to 340°F and bake for about 45/50 minutes, or according to your oven’s characteristics.

    Once the orange and lemon cake is baked, as always check with the toothpick test, let it cool, and start preparing the candied citrus.

  • Slice the lemon and orange. In a wide pan, add water and sugar and let them dissolve over low heat.

    Add the citrus slices, and keep cooking over low heat to soften the citrus gradually.

  • Drain the citrus slices on a rack, then decorate the orange and lemon cake.

    If, like me, you want to add the glaze, put 2/3 tablespoons of powdered sugar in a cup or glass, add the lemon drops and a little water.

  • Mix vigorously and adjust the consistency of the white glaze to finish decorating the cake.
