  • 1/2 onion
  • 3 oranges (juice)
  • 1 glass brandy
  • 4 tbsps flour
  • to taste salt

FOR THE PREPARATION OF ORANGE HAKE FILLET RECIPE

  • start clearly by defrosting the fish by leaving it in an airtight container in the refrigerator for the necessary time.

    I place each fillet on a plate and season it with salt and pepper, then I generously flour it.

  • I put a pan with vegetable oil on the flame, and at the right moment (about 340°F) I fry the hake fillets, browning them on both sides and then draining the excess oil on kitchen paper towels.

  • In a new pan, I add a splash of oil and sauté the chopped onion, and when it is golden, I add the brandy, letting the alcohol part evaporate.

    Then I pour in the orange juice and let it thicken for a few minutes.

  • I blend this cooking base to have a sauce, which I then return to the pan, adding the hake fillets and seasoning again with salt and pepper.

    I leave it in the pan for a few minutes and serve immediately at the table, drizzling the fish fillets with this fragrant sauce and adding a pinch of fresh chopped parsley!

    I serve at the table with parsley potatoes or boiled and sautéed in the pan with a nice chop of fresh sage!
