Oven-Baked Seafood Mix

Today, a delicious main course that I almost finished by myself during a solo lunch, the oven-baked seafood mix!

I happened to be at the Pianeta supermarket Conad and saw on sale prawns and squid and immediately thought of preparing them in the oven with a savory breadcrumb that covers everything during cooking and makes it crispy.

I saw other recipes of this kind but the shellfish still had the shell, so… why breadcrumb the shell that’s going to be discarded? And the intestinal vein inside? Are we going to eat that?? No thanks, I took the time to clean everything, but I believe it’s much much better this way…

The preparation is quite fast anyway: in 30/35 minutes max you’re already at the table with a fork in hand enjoying this super tasty dish!!!!

Which breadcrumb for the oven-baked seafood mix?
My breadcrumb is quirky in the sense that I opened the pantry and went ahead with turmeric and black pepper, a pinch of chili, some garlic, lots of parsley, finely chopped sandwich bread in the mixer, a small dose of finely grated Parmesan or Grana, and the usual salt and pepper!

And just before serving at the table, a nice little grating of lemon zest that doesn’t turn bitter when raw and makes everything even more appetizing and fresh! Guys… good but so good!!!!

The oven-baked seafood mix is a dish to make in any season, summer and winter, although clearly, in each season you’ll find different fish:
in summer, the oven-baked seafood mix will contain sole, tuna, hake, sea bream, sea bass, or branzino, for example
in winter, the oven-baked seafood mix will include hake, anchovies, turbot, sole, cuttlefish.

Ingredients for OVEN-BAKED SEAFOOD MIX

  • 1.1 lbs prawns (also thawed)
  • 0.55 lbs squid rings (also thawed)
  • to taste turmeric (powdered)
  • to taste chili (powdered)
  • to taste fresh parsley (chopped)
  • to taste Sandwich bread (finely chopped)
  • to taste Grana padano (grated)
  • 1 clove garlic (whole)
  • to taste Lemon zest (ONLY before serving)
  • to taste salt

FOR THE PREPARATION OF OVEN-BAKED SEAFOOD MIX

  • To prepare the oven-baked seafood mix, first clean the fish.

    Remove the shell from the prawns and also the intestinal vein. Cut into strips (mine are too chubby) the squid already cleaned.

  • Chop the sandwich bread in the mixer and place it in a bowl.

    Add the turmeric, chili, garlic, and the chopped parsley and mix the mixture well. Wash and dry well shellfish and mollusks.

  • Also add finely grated cheese and season with salt; then mix everything well.

    Take the prawns and the squid strips and place them in the breadcrumb, trying to completely cover both shellfish and mollusks to make them crispy and tasty during cooking.

  • Arrange the seafood mix neatly on a baking sheet (or tray) lined with parchment paper, adding lemon wedges.

    Bake in a preheated oven at 350°F for about 15 minutes or according to the characteristics of your oven.

    Once cooked, remove the tray and grate here and there a little of the washed and possibly organic lemon zest.
