Today, a flavorful, tender, and spicy main course with oven-cooked marinated chicken.
Marinating meat is a very simple way to season meat (but also fish and vegetables) by leaving it wrapped in spices, liquids, and various condiments for a certain period before cooking it normally.
Generally, the marinade consists of a fat that hydrates the meat, an acid that starts to “cook” the food, and a varied mixture of spices and aromas that flavors the meat.
Once the marinade ingredients are chosen, you need to massage the meat with them, then seal the container and put everything in the fridge for a few hours.
Even just aromatic herbs and a bit of extra virgin olive oil and lemon juice can flavor a chicken breast that will be tender and very tasty when cooked!

Ingredients for OVEN-COOKED MARINATED CHICKEN
- 1 tablespoon curry
- 1 tablespoon paprika
- 1 1/2 tablespoon chili pepper (powdered)
- 1 tablespoon turmeric
- 1 tablespoon sage (chopped)
- 1 tablespoon rosemary (chopped)
- 1 clove garlic (chopped)
- 4 tablespoons extra virgin olive oil
- 3 tablespoons lemon (juice)

- 28 oz chicken (for me, thighs)

FOR THE PREPARATION OF THE OVEN-COOKED MARINATED CHICKEN RECIPE
Finely chop the aromatic herbs and put them in a large bowl suitable for containing the chicken pieces.
In the same bowl, add the spices, i.e., paprika, curry, chili pepper, and turmeric.
Now pour into the bowl with the spices and aromatic herbs, the lemon juice and the extra virgin olive oil.
Also add the chicken pieces and mix very well, massaging the meat and aromas and blending the flavors well.
Then seal the bowl well with plastic wrap and let it rest in the fridge for at least 3-4 hours.
After the time has passed, line a baking tray and place, adding the marinade diluted with a couple of ladles of water, the marinated chicken pieces and seasoned with salt and pepper.
Now bake in a preheated oven at 374°F and let it cook for 45 minutes or according to your appliance’s characteristics.
Once cooked, serve now at the table with a simple side dish like parsley potatoes.
