- 11 oz paccheri
- 10.5 oz sausage
- 9 oz sheep ricotta (or cow's milk ricotta if you prefer)
- 3.5 oz onion
- 3 tbsps extra virgin olive oil
- 9 oz tomato sauce
- to taste smoked ricotta

FOR THE PREPARATION OF THE SHEPHERD-STYLE PACCHERI RECIPE
Start the recipe by putting the EVO oil in a pan or wok and sautéing the finely chopped onion.
When it changes color, add the sausage without casing and crumbled with your fingers, cooking it over medium heat and stirring with a flexible spatula.
Stir and let it brown well; when the sausage is well browned, add the tomato sauce, letting it cook over medium-low heat for about ten minutes.While the shepherd-style pasta sauce continues to cook, put a high-sided casserole on the stove with salted water, adding the pasta when it reaches a boil.
When the paccheri are almost ready to be drained, mix the ricotta with a ladle of cooking water and then pour it into the pan or wok, blending the sauce well that forms.
A pinch of pepper and voilà, we’re ready to taste!!!!!!!!
