The pan-fried seasoned sweet potatoes surprised me, and since it’s the first time I cook them, they will surely be the stars of other recipes in the future because their taste is very pleasant!
Also known as American potatoes or yams, they differ from our classic potatoes in shape, skin color (reddish, purple, light) and flesh color (white, yellow, orange, purple), in moist or dry texture, in calories (86 per 100 grams of product against our 77), and in their more or less sweet taste.
The American potatoes we most often find at the supermarket have orange flesh with a rather thin skin and a taste reminiscent of pumpkin.
With sweet potatoes or yams, we can prepare many recipes, they are suitable for all methods of cooking (boiled, baked, or pan-fried), and the cooking time is about 1/3 less than classic potatoes.
The main producer in Europe is Spain, but our country also imports them from Egypt, Central America, and the United States.
For correct information, I also provide the indicative sale price we find in supermarkets, which is about €2.70/kg.
After all the more generic information, I confess I didn’t really feel like turning on the oven, so I prepared them in a pan by cutting them into chunks and adding some slices of red onion and sage that’s invading my balcony…

Sweet Potato Seasoned Pan Recipe Preparation
For this simple and delicious side dish, peel the American sweet potato or yam and cut it first into slices and then into cubes.
Put the extra virgin olive oil in a pan and add the peeled and thinly sliced red onion rings.
Let the onion brown, then add the American potato cubes.
Mix well and add the hot water, letting them cook until the American yam cubes are tender.
Add the sage and Taggiasca olives, adjusting the salt and pepper.
Let the American sweet potato side dish flavor for a few minutes by stirring, and before serving, add a drizzle of raw EVO oil.
I must say I enjoyed the American sweet potatoes with red onion, sage, and Taggiasca olives… they are a side dish with no pretensions, with a light and slightly sweet taste that can be paired with many meat and fish dishes, especially roasted or grilled.
Bon appétit!
