The pan-fried spicy eggplants are typically a summer dish, but today I had a craving and here’s this very appetizing side dish ready!
I call it a side dish, but it could easily be the sauce for a short pasta first course, the filling of a savory pie with puff pastry crust or brisée pastry or a salty dish for a appetizer buffet with sliced flatbread, small focaccias, etc.
In short, this recipe can be used as desired and will be delicious!

Ingredients for PAN-FRIED SPICY EGGPLANTS RECIPE
- 2 eggplants (medium)
- 3 plum tomatoes
- 1 clove garlic
- to taste extra virgin olive oil
- to taste chili pepper
- to taste salt
- to taste parsley

FOR THE PREPARATION OF THE PAN-FRIED SPICY EGGPLANTS RECIPE
Peel the garlic clove and crush it. Sauté it in a pan or wok with 2 to 3 tablespoons of extra virgin olive oil.
Once golden, remove it and add the washed, dried, and medium-sized diced eggplants.
Season with salt and pepper to taste and continue cooking the spicy eggplants over medium heat, adding a little water if the preparation dries out too much.
Wash and cut the plum tomatoes into chunks and add them to the already sautéed eggplants.
Add fresh or dried chili pepper or flakes as you prefer and continue the preparation for another 7 to 8 minutes, adding freshly chopped parsley at the end of cooking.
