A seafood main today, pan-fried squid rings and stewed with Taggiasca olives, capers, and a rich and creamy sauce, perfect for dipping!
Personally, I prefer buying big fish like SEA BREAM or SEA BASS rather than this type of mollusk because they require a longer cooking time since they are rich in difficult to digest connective tissue which hence needs longer cooking times.
However, especially when stewed and cut into strips ops ONE, the pan-fried squids are truly appetizing, and we enjoyed them immensely as a family!

Ingredients
- 1.1 lbs squid rings (thawed for me)
- 1.2 cups tomato puree
- 1 clove garlic
- 1/4 cup white wine (still)
- to taste extra virgin olive oil
- to taste salt
- to taste chili pepper
- to taste Taggiasca olives
- to taste capers in salt (desalted by soaking in water)

Steps
1) I bought the fish already thawed at the Pam supermarket, SO I started the seafood recipe by putting a little extra virgin olive oil and the garlic clove in a wide pan or wok and letting it all brown for a few minutes.
2) Now I add the tender squid rings to the pan and after a couple of minutes pour in the still white wine, letting the alcohol part evaporate.
3) Then I pour in the tomato puree with half a cup of water and after covering the squids in the pan with the lid, continue cooking for at least 45/50 minutes, checking and adjusting the salt.
4) I also add a fresh chili pepper or a few dried flakes, some desalted capers, a few olives, a pinch of chili pepper, and mix well to flavor evenly the thawed squid recipe with tomato sauce.
